Ingredients

  • 4-6 Aspen Ridge® rib eye steaks
  • 1 clove garlic
  • 1 large onion, diced
  • 2 Tablespoons butter
  • 1 cup canned tomatoes
  • 1 cup diced celery
  • 1 cup diced green pepper
  • 1 cup ketchup
  • 2 Tablespoons brown sugar
  • 3 dashes Tabasco sauce
  • 1/2 teaspoon dry mustard
  • 2 cups beef stock, or 2 bouillon cubes dissolved in 2 cups water
  • salt and pepper, to taste

Directions

  1. Rub steaks with side of clove of garlic. Place in shallow baking pan; roast uncovered 30 minutes in 350 F oven. Brown onion in melted butter in heavy skillet.
  2. Add remaining ingredients, stir, and cover. Simmer over low heat for 1 hour.
  3. After steaks have baked 30 minutes, pour sauce over top. Roast additional 45 minutes basting frequently.
